We all end up with left overs at sometime, but don’t throw them out! If you make more than you require there are a couple of things you can do with them. If there is a portion size left, pop it into a plastic container and put in the freezer for another day. If there is less than a portion left, you can save it for tomorrow’s lunch. Left over bolognaise is lovely warmed up to have with salad for lunch. I eat it cold too, bit I realise that not everyone shares my eating habits!
Some recipes we use will only ask for egg yolks. Rather than just throwing out the whites, put them into a freezer bag and freeze them for a later date. All you will need to do is defrost them before using. You could also lightly whisk them and coat some sweet potato wedges in them before roasting in the oven. Doing this will help the wedges crisp up while cooking.
