Salmon One Pot Hot Pot makes a quick and healthy dinner. One pot dishes are loved by dish washers up and down the country. For this recipe use either full fat or semi skimmed milk. If you use skimmed milk the low fat content means it will burn on the bottom of the pan, and your dishwasher will go from happy to frustrated in a jiffy. As with all my recipes, nothing is set in stone so mix and match the veg you add to suit you and your family. If you family only eat a limited range of veg, eating them everyday is so much better than not eating veg at all.
Serves: 2 adults and 2 children

milk either full fat or semi skimmed
potatoes peeled and chopped into 1 inch cubes
salmon skin removed and chopped into one inch cubes
sweetcorn defrosted if using frozen
frozen peas defrosted
- Put the milk into a pan and heat. Add the potatoes then bring to the boil, cover, and cook for 6-8 minutes.
- Check the potatoes are cooked. If they are use a fork and press about half of the potato cubes against the side of the pan. They will break up and thicken the sauce.
- Add the salmon and sweetcorn to the pan. Cook for 5 minutes until the fish is cooked.
- If you need more liquid add the stock a bit at a time until you get the consistency you want.
- Serve with veg.
