Ours lives are busier than ever and instant messaging on social media seems to make life even busier. A busy family life does not mean that the quality of food we eat should have to suffer. We are surrounded by fast food in supermarkets and takeaways, it is convenient and cheap. It is also full of sugar, salt and fat which is a contributing factor to our ever expanding waistlines. With a little planning you can make quick family dinners that are tasty, healthy and will not break the bank.
In the past people assumed that a healthy diet meant vegetarian or vegan. Things have changed so much and a healthy diet encompasses all food groups, and all the ingredients in my recipes can be bought from your local supermarket. Finding quick recipes for family dinners and planning ahead means that you will be less tempted to get a take away or ready meal when rushing about between school and cubs, scouts, swimming, ballet the list is endless. The best time saver I use is bulk cooking. If you are cooking something like chilli, bolognaise sauce or mince, it does not take much longer to make double quantities. Freeze the extra portions, then when you know it is going to be a rush at dinner time, take it out of the freezer in the morning, into the fridge. By the time you get home it will be defrosted and all you have to do is cook rice or pasta and some veggies. Most things freeze well, however sweet potato is not so great it ends up mushy and waterlogged when reheated.
Quick Family Dinners
How often have you bought a ready meal from the supermarket, got home and realised that it will take longer for the oven to heat up and cook than if you had cooked from scratch? Ready meal does not always mean quick meal, they could be renamed as ‘Less Effort Required Meals’. All you need to do is a little forward planning. Generally on a Sunday I plan the meals for the week ahead and do my main shop of the week. This saves little trips so to the supermarket throughout the week, and the temptation to buy ready meals. For busy days during the week I make sure that I either have something in the freezer I can use, or make something that I know is a quick family dinner.
