Chicken Pie


This chicken pie is a winner every time. If you have cooked chicken in the freezer, all you need to do is boil some potatoes and make the sauce. I have put frozen peas in, but, as with all of my recipes choose what suits your family. Frozen sweetcorn or chopped green beans will do just fine.

Serves: 2 adults and 2 children Prep Time: 15 mins Cooking Time: 25 minutes
300 grams potatoes
25 grams margarine or butter
25 grams plain flour
3/4 pint milk
195 grams cooked chicken
75 grams frozen peas defrosted
cheese grated


  1. Peel the potatoes and chop into chunks.
  2. Boil for 10-12 minutes until soft. Drain and leave in the pan without the lid on. This will allow any excess water to evaporate.
  3. Meanwhile place the margaine, flour and milk in a pan.
  4. Gently heat the pan, when the margarine has melted stir the sauce, keep stirring until it thickens.
  5. Let the sauce boil for 2 minutes, while continuing to stir. This boiling process, cooks the flour and avoids the sauce tasting of the flour.
  6. Mix the chicken and peas into the sauce.
  7. Mash the potatoes.
  8. Pour the sauce into a casserole dish and top with the mashed potato.
