Chicken and Date One Pot


This chicken and date one pot is an ideal dinner if you do not have long. Being one pot, it is also simple. When dates cook they disintegrate and you are left with a lovely sweet caramel taste and just small flakes of dates. As with all my recipes, pick the veg that suits your family. So if peppers don’t go down so well leave them out or add some peas instead.

Serves: 2 adults and 2 children Prep Time: 10 mins Cooking Time: 20 minutes
1/2 tablespoon vegetable oil
1/2 onion chopped
375 grams chicken
80 grams dates chopped
75 grams white rice
1 carrot diced
1 red pepper diced
3/4 teaspoon cumin seeds crushed
1 clove garlic crushed
275 mls chicken stock


  1. Heat the oil in a pan and add the onions. Fry for 5 minutes.
  2. Add all the remaining ingredients and stir well.
  3. Cover and simmer for 15 minutes.
  4. When the time is up, check to see of the rice is cooked. If it still a bit hard, give it another 5 minutes.
  5. You may need to add a little water at the end of cooking to loosen it up.
  6. Serve with green veggies.
