Quick Pizza Wrap

Fancy a quick pizza wrap for lunch? They are lightening quick and it takes my grill longer to heat up than it does to put this quick pizza together. It is a great recipe for lunch and is a good way to use up left over chicken, ham or peppers.

Serves: 1 Prep Time: 5 minutes Cooking Time: 5 minutes

1 tortilla wrap
2 tablespoons passata or homemade tomato sauce
toppings of your choice


  1. Turn your grill on to high.
  2. Spread the passata or tomato sauce over the tortilla.
  3. Top with your choice of toppings.
  4. Grill until golden brown and bubbling.

Quick Lentil Soup

This quick lentil soup is really tasty and will warm you up and fill you up, especially on a cold day. The addition of carrots not only gives it a bit more colour, but sneeks in some veg when the kids are not looking. When you add the stock it will seem like far too much liquid, however the lentils soak up a huge amount of liquid. Once you have blended the soup you may need to add a little more water to loosen it up.

The lentils will continue to absorb water after you have made the soup, so if you leave it for a few hours or overnight you will find it has really thickened. Just add water to loosen it off.

Serves: 2 adults and 2 children
Prep Time: 10 mins Cooking Time: 15 minutes

teaspoon vegetable oil

onion chopped
carrots chopped
grams red lentils
mls chicken stock


  1. Heat the oil in a large pan then add the onions and carrots. Fry for 5 minutes.
  2. Add the garlic, lentils and stock. Give it all a good stir, put the lid on and simmer for 15 minutes.
  3. Check the carrots and lentils are soft, then blend. Add more water if the soup is too thick.
  4. Serve with crusty bread.
